I have patience in some areas of my life. In one of my pre-cupcake jobs, I trained computer neophytes, walking them through such basics as how to use the arrow keys to navigate in a document and when to double-click vs. right click (making sure to clarify that right click does not mean to write the word "click" in Notepad). These days, I can sing Itsy Bitsy Spider to my toddler and still enjoy his wide mouthed grin on the twentieth rendition. However, when it comes to standing by a stove watching the number go up on a candy thermometer, I have zero patience. I tend to walk away and come back just in time to see my caramel/candy/anything in my pot burnt and inedible. I always set a timer that beeps to tell me when my cupcakes are done, but I had never seen a candy thermometer with any kind of alert feature.
Twitter to the rescue:
I asked my tweeps if anyone had heard of a candy thermometer that beeped when it reached the correct temperature. Gesine Bullock-Prado, author of Confections of a Closet Master Baker: One Woman's Sweet Journey from Unhappy Hollywood Executive to Contented Country Baker, responded right away to tell me about the Maverick! This was the thermometer of my dreams (if I were to dream about thermometers).
I dropped the folks at Maverick an email letting them know that I couldn't wait to review their product and share it with my readers. They were game and sent me a candy thermometer to review right away (I love being a cupcake blogger!). I put the Maverick to test on my Shirley Temple lollipops. The lollipop recipe warned not to walk away from the saucepan. Yet, I boldly set the Maverick to the Hard Crack setting and wandered off to do something else. I trusted my new best friend Maverick (doesn't that sound like a cool boy's name - give me credit if you name your son that) completely and it didn't let me down. It beeped at exactly 300 F and my lollipops were perfect on the first try.

I love to make caramels. I'm too nervous to make hard candy - I'm afraid it will burn or burn me or be too soft. The first thing I'd tackle is a simple hard candy. Nothing too fancy, just to get the sugar cooked correctly!

This would be a miracle! I get by with the standard candy thermometer but it would be great to have the option of walking away from caramel and not making it a touch hard to chew. This year for Christmas I made vanilla, sea salt, gingerbread and pretzel/stout caramels. I have lots of other ideas and maybe with this tool I would test them.

I haven't tried to make candy yet, other than a few very basic things. But I recently inherited my Great-Aunt Bernice's recipe box, and along with the cookies and other baked goods that I'm already comfortable with, there are a lot of candy recipes - and my childhood memories are full of the sight and taste of her homemade treats! I think winning the Maverick could inspire me to get started on some of her recipes - and I will also admit that as a veteran soap-maker, I can come up with a few more good uses - like making sure my oils are the exact right temperature to combine with my lye water!

For almost every holiday - because I make it to put in my dark chocolate turtles and I make angel food candy too. Love making candy and caramels for my 9 grandchildren and could use a new thermometer.......mine has worn out so I can't see the numbers on the scale anymore.

ReplyDeleteI love to make peanut brittle, but really only have the patience to do it around the holidays. Because it takes so long to get it to 295 degrees, I stand next to the boiling pot with my current novel of the moment. I read a few lines, look up at the thermometer and then read a few lines more... this goes on for quite some time. Well, this past year, I was reading a hard cover copy of the latest Jodi Piccoult book that I had borrowed from a friend and I ruined it when some of the hardened sugary syrup landed on it! It cost me $35.00 (and it was a few weeks before I got to read the ending of that book)... the good news is that the peanut brittle was tasty!

ReplyDeleteMy family loves it when I make homemade butterfingers! And it's so easy, 1/3 c light corn syrup, 1/3 c water Mix till combined. Add 1 c granulated sugar. Cook till it reaches 310 degrees. Take it off heat and add 1 c creamy peanut butter. Smooth into prepared pan and score with greased knife. When it has cooled completely break it at score marks and dip into melted chocolate and cool. Tastes just like a butterfinger!
ReplyDeleteThe only candy I've ever made was cinnamon candy in high school and that was just a guess as to how long to cook it as I didn't hav a thermometer and still don't. The only thing I would like to try is suger bubbles for my cakes but need a thermometer for that! BTW I love your blog and I am getting ready to open a cupcake bakery in my home town!! Thanks so much!
ReplyDeleteohhhhh....fudge! It's a dual purpose word - it's what I try to make and then what I end up saying when my dessert doesn't harden...finally I gave up. But it's still a joke among my work "family." They still remember my frosting that was supposed to be fudge...

I was always afraid to make candy because of the whole thermometer thing, but now I make fudge using Gale Gand's recipe with a crude thermometer - fudge is our favorite...I also make mochi too which is a kind of "Asian candy."

I always make my mom's butter brickle at Christmas only now without nuts because one of my sons has a nut allergy. My boys are old enough to do some cooking with Mom and would love to try making caramels and a thermometer like this would be perfect.

I've attempted to make toffee with chocolate, followed by making caramel but what I have used a candy thermometer mostly for has been to make homemade marshmallows.

Having so far dropped two of the glass candy thermometers to their death and my eternal panic that I have contaminated my house and children forever, I would love to win a thermometer! I would first make salted caramels and then some of those caramel cages and shards to use overtop of some other dessert. Great initiative on the thermometer!

I completely understand what you mean about patience for some things but not thermometers. I make fudge at work, but I don't know if that counts and I've "lost" all of the thermometers and now go by "when it feels like it's done". I'd love to make candy though. I used to make toffee with my mom every Christmas but since I moved out I haven't been around to help her make it. If I had the thermometer I would get the recipe from her and give it a shot. I jsut love making all my own stuff and would love to expand into candy.

I tried making fruit jelly candies from a recipe at Oprah.com. It was not very successful. Having a thermometer that I could've set and walked away from might have helped! I would love to give it another try!

the only candy I've made is leche quemada with my mother and grandmother. I've tried making it without them, but I can never get the consistency just right.

ReplyDeleteI attempted Candy Corns last year around Halloween. They were yummy! However, kneading the color into the candy was so challenging. First it was really hot, but then gets hard as it cools. Ugh!

I've never made real candy, mainly due to my fear of cooking with a candy thermometer. I've only made fudge that requires no thermometer. This digital one looks foolproof enough to ease my fear - even if I don't win I might buy one!
