Beer Cheese Cupcakes with Bacon Cheddar Cream Cheese Frosting: The Ultimate Super Bowl Cupcake

Print Friendly and PDF

Beer Cheese Cupcakes

Beer and cheese dip show up at every Super Bowl party. Beer cheese Super Bowl cupcakes are sure to be a new and unique (to say the least) addition to the same old thing. Oh, and let's not forget that these Super Bowl cupcakes are topped with bacon and cheddar cream cheese frosting. Can you say artery clogging?

Beer Cheese Super Bowl Cupcake Review

The house smelled amazing throughout the entire cupcake process. First, there were smells of beer and cheese. It basically smelled like beer cheese soup. Then, there were smells of bacon.

The taste was sweet and smoky with a hint of beer.

But, Don't Let Your Super Bowl Cupcake Baking Stop Here

Read on for the beer cheese Super Bowl Cupcake recipe, but be sure to also check out my buffalo chicken cupcakes and my chocolate cupcakes baked inside of egg shells that look like footballs.

Beer Cheese Super Bowl Cupcake Recipe

I came up with the recipe by modifying the recipe I used for chocolate stout cupcakes which was a modification of Big City, Little Kitchen's Guinness cupcakes.

Yield: About 18 cupcakes
  • 1 cup beer (I used Bud Select. I'm not usually a Bud gal, but they do sponsor the Super Bowl, so I had to go there.)
  • 1 stick, plus 1 tb, unsalted butter
  • 1 cup grated cheddar (I'd go for the good stuff here. Get something nice and sharp, not the cheap stuff that comes shredded in a bag.)
  • 2 cups dark brown sugar
  • 3/4 cup sour cream
  • 2 eggs
  • 1 tb vanilla extract
  • 2 cups flour
  • 2 1/2 tsp baking soda
  1. Heat beer and butter in a large saucepan on medium-high heat until butter is melted.
  2. Add cheddar.
  3. Remove from heat, and whisk in the sugar.
  4. In a separate bowl, whisk the sour cream with the eggs and vanilla.
  5. Mix the sour cream mixture into the beer mixture.
  6. In a separate bowl, sift together the flour and baking soda.
  7. Fold flour mixture into the batter.
  8. Fill cupcake liners 3/4 fill.
  9. Bake at 350 F for 25 minutes, or until inserted cake tester comes out clean.

Bacon Cheddar Cream Cheese Frosting Recipe
  • 8oz cream cheese, room temperature
  • 1/4 cup unsalted butter, room temperature
  • 4 cups powdered sugar
  • 3/4 cup grated cheddar
  • 1 cup bacon bits (I made my own by cooking some bacon in a glass pan in the microwave for 3 minutes between paper towels and food processing it.)
  1. Beat cream cheese and butter until creamy.
  2. Add grated cheddar.
  3. Slowly mix in powdered sugar.
  4. Stir in bacon bits.
How to Make Football Cupcake Toppers

I learned how to make football cupcake toppers from a post on Team Sugar. It's simply a chocolate covered almond with white decorator gel on it. It's so easy and so cute!

Final Words on the Super Bowl

Since St. Louis isn't in the game, I've got to cheer for NY. Go NY GO! FYI - The only reason I know NY is even in the game is because my friend mentioned it in her Super Bowl party invitation.

  1. Should stay on the Jim Gaffigan bit and do Hot Pocket Cupcakes next time. They may not taste good, but they would be hilarious!

  2. bwahahaha- I saw on Iron Stef's blog you were a little pissy about that. Too funny.
I can't believe I'm saying this but I think I might have to actually try these for Super Bowl. Pretty damn genius really. And hubby will like this better than the lemon meringues I just made without a doubt. He's a simple man and bacon def makes him happy.

  3. I am so interested in trying these. Hubby said he didn't know if he'd eat one. I might make a 1/2 batch just to see what they're like...

  4. Ran - That's actually a decent idea. :) And in other comments, thanks for getting me to try cupcakes other than the ones I make. They were yum!

Bacon - Your blog cracks me up! Glad you like the idea!

Tempered - It's worth trying. Definitely different, but tasty!

Jen - He'll eat one once he smells it! (At least I think he will, I clearly don't know your hubby.)

  5. I do love the photo - so fun! I love stout - particularly Young's double chocolate stout but the bacon and cheddar...it's very wild.

  6. These are a Super Bowl must! People will freak when I show up with these. Thanks for a great recipe.

  7. That's certainly very unique! I've been turned off to the idea of cheese and beer (since trying Kettle Chips' "Cheddar Beer" flavor, which I hated), but of course, chocolate stout cake is a different animal altogether!

  8. Another winner...and the chocolate-covered almond footballs are tasty as well as adorable.

  9. So, I must tell you.
I stumbled across your blog and fell in internetLOVE with it. One of my new years resolutions is simply, "Bake More" so i have been trying to spend some quality time with my oven 2-4 times a week.
My roomates are eating it up: excuse the pun.

When I came across your website, I was so excited and came home to report to them. They, while not being as excited as I am, helped me choose which cupcake to start with: and this Superbowl Cupcake of WONDERS! was the first choice.

I made them last night to accompany our watching movies night- and they were such a hit! At first, I think everyone was a little leary. My roomate Kelly, who is NEVER shy to eat something new, kept eyeing the batter and the frosting once mixed. It took her a good fifteen mintues before licking the mixer spinners. But once she did: WOWZA!

My other roomate fell in LOVE once she forced him to indulge in some "bacony frosting from heaven".

And the end result: EVEN BETTER!
These were such a hit with the 20-something crowd!

Thank you for being SUCH a kitchen genius and sharing with us all. you have inspired me on so many baking levels =)

  10. Those are great...I recently tried a bacon muffin recipe and I wasn't crazy about because (I later realized)the batter just didn't have enough fat. Can I just make your icing and eat it?

  11. Christine - Yeah - that chocolate stout is good stuff. :)

Gigi - Good luck with it. Let me know how it goes if you try it!

Manggy - Never tried those chips. Have you had beer cheese soup? it's actually pretty good.

Nancy - Thanks! You are one of my top tasters!

Lucky - Wow! You made my day with that comment! Thanks so much! I'm so happy to hear that you and your friends enjoyed them and enjoy my blog. I am always nervous when people try to bake something that I have created. It is so good to hear that it was a success for you! Glad you found the blog and I hope you continue to comment and let me know if you try things.

Julie - You could totally just spread that icing on cracker. mmmm.

  12. I'm so excited you found my post about your fantastic little superbowl cakes! I'm glad they did the recipe justice and I'll definitely be trying some more of your recipes. I hope you have a great superbowl (and to the lady who was worried her husband would't like them, my boyfriend thought they were great - they smell so good when they're baking that they sort of sell themselves even without mentioning the beer component!)

  13. Even I am into this new aspect of the superbowl.

  14. I was inquisitive to find out more about these cupcakes after reading Tempered Woman's post mentioning them.

I think they're going to be legendary. The idea of them didn't seem right at first but now I want to try.

ps. I love St Louis, we have family there.

  15. Random cupcake blog lurker here...

I made them, I enjoyed the few I ate... but I couldn't take the rest of them to the party. Because, we didn't go to a party due to a plague started by my 6 month old son. So sadly, after working on them one night and being excited to share them... they didn't get shared. :( Maybe next year.

And whoever asked about eating the icing alone... I was wondering the same thing and I figured I would be insane for wanting to eat bacon icing by itself. *sigh*

  16. I made these cupcakes this weekend using Schlafly's Oatmeal Stout, and they were great!

    Such creativeness, Stef!

I will be making another batch in the future.

  19. Just stumbled across this recipe and made them. The cupcakes themselves are really very good. My husband ate his plain as he is not a frosting guy and loved them! I think the frosting is yummy too, I think it would be tasty spread on corn muffins! Though I think it just has a weird factor some people won't be able to get past.

    Thanks for sharing!

  21. I made the "frosting"(if thats what we are calling it) and applied it to some chocolate almond biscotti.
Lay it in a circle on a platter with something cool in the middle. crowd pleaser

  22. I dunno what I did wrong, but I managed to mess these up. They taste great, but all the cupcakes collapsed in the middle. Is it because of the carbonation?

Hopefully I can cover up the mistake with lots of yummy frosting!

  38. If I make these the night before, do they need to be refrigerated until tomorrow or room temp until tomorrow? Trying to decide if I should wait until tomorrow to make them or if I can do it tonight?

  39. I definetely made these. Oh yes, I made these and the Hot Wings cupcakes.. They were both a success AND the star of both Super Bowl parties we attended! They are a new staple of mine..WHO would have thought! Ohhhh the bleu cheese! Every scruptious bite. And BACON and beer! ohh my heart! Thank you so very much for your wonderful creations! I am now entirely devoted to you and your DELICOUS cupcakes (not sure if this is a love letter to you or your cakes!)

  41. Made these for a coworker's birthday today & everyone loves them! They're all hesitant but once they try them, they're happy. I was confused though by the tb for the tablespoon abbreviation... it should be T or tbsp. I almost read the butter as 1 stick, plus 1 lb. unsalted butter!!!!
