Relatively Low Calorie Chocolate Mousse: Made From Scratch with Raw Eggs

Chocolate mousse is not low calorie. I'm not going lie to myself about that. However, this chocolate mousse has no sugar, butter, or heavy cream in it, which makes it a relatively low-cal chocolate mousse.

Did I Miss the Sugar and Cream in My Mousse?

I did not miss the sugar or the heavy cream in the mousse. If you use good chocolate, the flavor of the chocolate is able to stand on its own. The mousse was rich and decadent. I would never have guessed that there was no added sugar.

This Mousse Has Coffee Flavor in It

I found the recipe for the mousse in a discussion thread at getcrafty.com. It sounded amazing, but it had coffee in it. Coffee is on the banned foods list for Bride and Groom 2.0's wedding. Luckily, someone left a comment in the discussion thread asking whether the coffee could be left out. The original post author, Anthrogirl, responded, "The coffee simply intensifies the bittersweet chocolate. If you didn't know there was coffee in there, I don't think you would taste it much, if at all - and I can say that having used coffee with chicory added." She was right, Groom 2.0 didn't detect the coffee flavor at all!


The Relatively Low Calorie Chocolate Mousse Recipe

The discussion thread post that mentions the mousse recipe says that it came from the book, Last Chance to Eat, which I talked about in detail in my post on eggs. However, I can't find the recipe anywhere in the book! It's a good thing that Anthrogirl wrote it down.

This recipe serves 8. In my case, it filled all 16 of my Better Than Sex Cupcakes with plenty left over for snacking.
  • 8 raw eggs, separated (If you are concerned about egg safety, read my post on eggs. I used pasteurized eggs.)
  • 8 oz. bittersweet chocolate (I used Scharffen Berger)
  • 1 Tbsp. brandy
  • 3 Tbsp. coffee (I was too lazy to make coffee so I used 2 t of coffee extract instead.)
Beat the egg yolks until they are yellow. Place the broken-up chocolate in a small oven-proof dish; pour the hot coffee over the chocolate and put it in a hot oven and let the chocolate melt until it almost gets thick. Take it out of the oven and mix with a beater or wire whisk, adding the egg yolks. After they are incorporated, add the brandy. Whip the egg whites until they are foamy and hold soft peaks. Take two Tbsp. of egg whites and add the chocolate, then fold in the rest of the egg whites carefully. Pour the mixture into a glass bowl or individual serving dishes, and chill in the refrigerator for a few hours; the mousse will thicken up as it chills.

  3. wow that looks extrememlly rich and deicious. I make my low calorie chocolate pudding by using the instant sugar free and fat free chocolate pudding powder and then I mix it with lite cool whip. I really wanna try yours! especially if it has brandy and coffee. :)

  8. I made this for a dinner party last week. It was absolutely divine! It had everyone scraping the bottom of their trifle dishes and asking for more. I used a bar of semi-sweet Godiva Chocolate and a bar of bitter sweet Godiva Chocolate. They are 4 ounces each. I used unpasteurized eggs and no one got sick. I skipped the extra calories that whipped cream would have added and instead topped things off with fresh raspberries and mint sprigs. By my calculations, each serving (made 7 for my portions) had about 237 calories and 14 grams of fat. Considering that regular mousse has about 670 calories and 48 grams of fat, I would say this definitely is a great low cal/low fat recipe! This recipe is definitely a keeper!
